2 whole eggs
1/3 cup oil
1 ENTIRE lime
1 (7oz. bag) shredded coconut
1. Mix together in large bowl with a fork: Cake mix, Eggs, and Oil.
2. Microplane the rind of the lime, as naked as you can get it, into a bowl! Ream juice, mine usually gives me about 1/4-1/3 cup juice...
3. Fold in all the lime juice and rind shavings and coconut into the #1 mix.
4. Drop by rounded tablespoons onto parchment lined baking sheets.
Bake at 350* for about 11 minutes per sheet. Makes about 30 cookies!
